Air-Fried Crunchy Shrimp Delight

Clean and devein small shrimp. Dry them thoroughly with a paper towel.
Pour flour into a small bowl, beaten eggs in another, and crushed cornflakes in a third bowl.
Dredge each shrimp in flour, then dip into the beaten eggs, ensuring it is fully covered. Finally, coat the shrimp in crushed cornflakes.
Preheat the air fryer to 385°F (195°C).
Arrange the shrimp in the air fryer basket in a single layer, ensuring they don't touch each other. You may need to cook in batches.
Air fry for 10 minutes or until the shrimp is golden and crunchy. Let them cool slightly on a wire rack or in the air fryer basket. Season with salt to taste.
Garnish with pickled peppers and fresh chives if desired. Serve with a side of spicy mayo, noting it adds about 100 extra calories.
