Air-Fried Crispy Beef Tacos with Roasted Salsa
93% Lean Ground Beef
White Onion

Mozzarella Cheese
Heat avocado oil in a pan. Add chopped white onion and 93% lean ground beef. Cook until onions are translucent.
Mix in paprika, onion powder, cumin, chili powder, and salt. Stir until beef is browned and well-seasoned.
Place Roma tomatoes, tomatillos, large red onion, jalapeño, and Fresno peppers on a baking sheet. Drizzle with avocado oil, broil until charred.
Blend roasted vegetables to a salsa consistency, adding salt to taste.
Microwave yellow corn tortillas for 15-20 seconds. Place a small amount of mozzarella cheese, cooked beef, and more mozzarella on each tortilla.
Fold tortillas and place in an air fryer. Spray with avocado oil. Air fry at 385°F (approx. 195°C) for up to 10 minutes, checking every 4 minutes until crispy.
Remove tacos, let cool slightly, then open and add chopped white onion and cilantro. Serve with salsa.
