Air-Fried Cowboy Butter Chicken Skewers with Jar Salad

In a large bowl, combine paprika, cayenne pepper, minced garlic cloves, lemon juice, lemon zest, thyme, Dijon mustard, dried parsley, and blended smooth cottage cheese to make the low-fat cowboy butter.
Slice 1 to 3 chicken thighs into bite-sized pieces. Add them to the bowl with the cowboy butter and mix thoroughly to coat.
Skewer the chicken pieces onto skewers.
Preheat the air fryer to 385°F (195°C).
Spray the skewered chicken lightly with oil.
Place the skewers in the air fryer basket, ensuring they're not overcrowded, and air-fry for 16 to 20 minutes, turning halfway through.
For the salad, in a jar, combine avocado oil, red wine vinegar, and add layers of sliced cucumber, sliced onion, sliced carrots, and lettuce.
Add honey, garlic powder, onion powder, lemon juice, salt and pepper to taste, and shake well.
Serve the chicken skewers with the salad for a light, healthy meal.
