Lentil and Mushroom Burger

Spinach
Cook lentils according to package instructions until tender. Drain and cool slightly.
In a large skillet, heat olive oil over medium heat. Add chopped mushrooms, minced garlic, and diced onion, sauté until the mushrooms release their moisture and the onion is translucent.
In a large bowl, combine cooked lentils, sautéed mushroom mixture, chopped parsley, breadcrumbs, egg, salt, and black pepper. Mix well until combined.
Form the mixture into patties and coat each lightly with a little additional breadcrumbs.
Cook the patties in a non-stick skillet over medium heat for about 5 minutes on each side or until they are crisp and heated through.
Serve each burger on a whole wheat bun, garnished with a slice of cheese, tomato, and fresh spinach leaves.
