Recipe
In a food processor, combine cooked chickpeas, sautéed spinach, minced garlic, cumin, and salt. Pulse until the mixture is smooth.
Stir in the breadcrumbs and form the mixture into patties.
Heat a skillet over medium heat and add a little olive oil. Cook the patties for about 5 minutes per side or until golden brown.
In a small bowl, mix tahini with lemon juice, water, and a pinch of salt to make the dressing.
Serve each patty on a multigrain bun, topped with tahini dressing, arugula, and sliced cucumber.
