In a small bowl, whisk together the peanut butter, coconut milk, soy sauce, lime juice, garlic, ginger, and red pepper flakes until smooth.
Place chicken breasts in a slow cooker and pour the peanut mixture over the chicken, making sure they are well coated.
Cook on low for 5-6 hours until the chicken is tender and thoroughly cooked.
Shred the chicken using two forks and mix it back into the sauce.
Add the red bell pepper strips and cook for an additional 30 minutes.
Serve hot, garnished with fresh cilantro and chopped peanuts if desired.
